The MTCC proudly celebrates local flavours through our in-house culinary team. As a certified 100km Foods partner, we source the majority of our ingredients from Ontario farmers and producers, including all wine and craft beer. With 80% of our food and beverages coming from local suppliers, every event offers guests an authentic taste of Canada and Ontario. This is part of our commitment to sustainability, community, and supporting the growth and resilience of Ontario’s businesses.

Many of the herbs and vegetables we use are grown on our very own rooftop.

Cookstown Greens

Cookstown Greens is a family-owned farm in the heart of Ontario’s Simcoe County, known for its fresh, high-quality beets, heirloom vegetables, and microgreens. As an MTCC partner, their locally grown ingredients are featured in our buffets, plated dishes, lunches, salads, and dressings. They help us bring the best of Ontario’s flavours to every event.

Upper Canada Cheese Company

Upper Canada Cheese Company, founded in 2005, is an artisan creamery in Ontario crafting award-winning cheeses from 100% Guernsey milk. A true showcase of Ontario’s dairy excellence, their delicious Niagara Gold cheese took first place at the Royal Agricultural Winter Fair in the Semi‑Soft category.

13th Street Winery

Since 1998, 13th Street Winery has been crafting award-winning wines that capture the spirit of Niagara. This family-run business has been a long-standing MTCC partner since 2015. 13th Street Winery’s delicious wines pair beautifully with our locally inspired menus.

Supporting Local Food

100 KM Foods: Our Centre was recently recertified as a 100km Foods partner, which highlights our commitment to sourcing from local farmers and producers. When you attend an event at the MTCC, you’re directly supporting Canadian businesses and the region's agri-food sector.

The MTCC is Feast On® certified! Feast On is North America’s largest and longest-running local food certification program, recognizing businesses that are truly committed to sourcing food and drink grown right here in Ontario.

A Difference You Can Taste

Our facility is equipped with a state-of-the-art kitchen, where our award-winning Executive Chef brings a delectable amount of innovation and culinary creativity to each course. And, as part of our commitment to supporting local businesses, our menus have been carefully curated to showcase the very best in homegrown food and wines.

STATE-OF-THE-ART CHARCUTERIE

With a Master’s Certificate in the making of Italian salami, Executive Chef Duff and his team have spearheaded a dry meat aging program that allow us to serve aged local Ontario beef to up to 3,500 guests. Plus, high-tech stagionello protein cabinets give us the ability to produce rapid acidification salami and whole cured cuts such as bresaola, cappicollas, prosciuttos and pancetta, by maintaining the traditional classic methods of charcuterie in a safe and secure environment. We also use these cabinets to cure and smoke our own salmon products.

MTCC PASTRY SHOPPE

With Executive Pastry Chef Mia De Ala at the helm, we operate a full in-house pastry shop, which allows us to truly customize our production and create specialized menu items to fit each event’s specific needs.

FOOD DONATION

Our customers have the opportunity to make a meaningful difference while creating a successful event. Extra food from events can be donated to make a difference in the local community and fight hunger.

SOUTH BUILDING CHEF’S GARDEN

Many herbs and vegetables used in our kitchen are grown in our very own Chef’s Garden. Located in our South Building’s rooftop, it allows us to use our own fresh ingredients as much as possible.

 

The Chef’s Garden is also home to rooftop beehives. We operate beehives on the roof of our South building. Each hive is home to 50,000 bees which help support the preservation of essential pollinators in our city to producing delicious honey for our culinary team.
